Getting the Kids to Visit – Oven Stew! To HELL with the Calories

so here is the part of dinner that
we’re all too comfortable with.

Last weekend, all I had to do to see my girls was to tell them that I was making oven stew and “POOF” there they were. Adding Pillsbury Whole Grain Crescent rolls didn’t hurt. I love the smell of the house when I’m making something like Oven Stew, turkey or cinnamon buns.

Salad has no smell. At least it has no smell to go wafting through the house as you’re making it. OK, egg salad does smell but I, personally, do not find it enticing. I don’t know anyone who comes into a house/home and feels the sulphurous scent of boiled eggs and onions  as a warm, welcoming scent. When you’re trying to sell your house, they tell you to put something cinnamon in the oven not egg salad.

But the calories are there, too. I didn’t have to eat any of the crescents. So I didn’t. But when I make something like Oven Stew I would have to work out the Carb and calorie content per serving. It sucks. The main carbs are in the potatoes so I went for more of the carrots. The beef is a good protein. The mushroom soup and onion soup aren’t too high in carbs and you don’t have to thicken the stew with cornstarch or flour so that carb is avoided. But there is a lot of sodium. Sigh, it’s always something. So, I can have stew with the family.

Now it’s all about portion control. There are portions then there’s Kirby Size! I’ve been very conscious of what size plates I use for me but…I only have one size of soup bowls – generous; not humongous like a good cereal or ice-cream bowl just generous. So I had to rely on the size of my ladle. (Wink, wink, nudge, nudge…how big is YOUR ladle?) I let the family go first and help themselves. Yes, I have pretty much a serve yourself dinner style. Then, I would measure out my two half ladles full of stew. I savoured every minute of the stew, and, oh yeah, the company of my family on a Sunday evening.

All was good. Leanne brought an apple pie and lavender whipped cream. I did have a taste…but not a slice and dollop!!!! And I will admit to all of you – I did not count one calorie. But I also did not lose control.

1 lb. (500g)  bottom round steak (or chuck or stew beef), cut into approx. 2 cm cubes
1 can cream of mushroom soup ( 1 can of water, too)
1 envelope of onion soup
3-4 carrots cut into 1 cm pieces
4 potatoes cut into 2 cm pieces (peeled or unpeeled)

Set the oven to 325 F.  Put all ingredients into a 5 L casserole or dutch oven and mix well.  This must have a lid!  Put a layer of foil over the opening of the casserole then put the lid on (this makes a great seal!).

Put in the oven for 2 1/2 to 3 hours.

NOTE: a cm is about the width of the nail on your baby finger.

  1. She looks a lot better with mauekp than without mauekp, of course she s not a natural beauty, I really wouldn t like to see her in the morning when she wakes up
