A Salad For Dinner or A Dinner Salad
Here’s a great way to beat the dieting blues.
When you step on the scale… pretend it’s your IQ!
Of course this doesn’t work if you are weighing yourself
in kilograms.
We had a spectacular dinner last night and it was a salad. Yes, just a salad. Normally I have an aversion to salad. I’ve had to eat soooo much of it, it is hard to make it fun and delicious. Well, maybe potato salad but that’s not a whole meal. Taco salad is a meal in a huge deep-fried tortilla bowl, 1/2 pound of fried meat and 1/2 pound of shredded cheese a bit of lettuce, tomatoes, salsa and topped off with guacamole and sour cream. Lots of sour cream.
Shauna got a recipe from Superstore; got all the ingredients; and made a wonderful salad for us. She used baby greens, arugula (I love arugula but if you plant it in your garden, it will take over if it blooms.), baby cucumbers, lots of red and yellow peppers, sautéed chicken, black beans, and a few multigrain tortilla chips. All this was topped with President’s Choice Avocado dressing with lime and jalapenos. Soon it was ready.
Shauna: “Dad, do you want your salad in a bowl or on a plate?”
Norm: “”Is anything else going with it?”
Shauna: “No, it’s a dinner salad.”
Norm: “Oh.”
Shauna: “The tortilla chips are for on top of it.”
Norm: “I like tortilla chips.”
Norm: “What’s this green stuff?”
Shauna: “That’s the dressing.” (Not telling him that it was made with avocados.)
Norm: “What, no 1000 Island? I like 1000 Island.”
Shauna: “No. Try it, this one had jalapenos in it.”
Norm: “OK, ok. (under his breath) I like 1000 Island.“
He had seconds but he did put 1000 Island on the one he got for himself. I have a funny feeling that as I make more “dinner” salads this summer, I’m going to have to get the extra-large economy size 1000 Island dressing.

1 pkg | PC Organics Romaine Lettuce Hearts , chopped |

2 cups (500 mL) | PC Organics Baby Arugula |
4 | mini cucumbers, thinly sliced |
1 | small sweet red pepper, thinly sliced |
1 | small sweet yellow pepper, thinly sliced |
1 pkg (500 g) | PC Chicken Breast Strips |
1/2 cup (125 mL) | drained and rinsed PC Blue Menu Black Beans |
1/4 cup (50 mL) | chopped fresh coriander |
1-1/4 cup (300 mL) | PC Avocado Dressing Lime and Jalapeño |
3 cups (750 mL) | PC Multigrain Premium Tortilla Chips |
INSTRUCTIONS
- In large bowl, toss romaine together with arugula; arrange on large shallow serving platter. Top with cucumber, red and yellow peppers and chicken strips. Sprinkle with black beans and coriander. Drizzle dressing over entire salad; top with tortilla chips.
