I Feel So Fat!!!!! So…Fireball Yams!

We had a poultry lesson today in my Foods and Nutrition class.  It’s difficult to teach any foods class when you have food and control issues!!!!

We cooked a 14.4 lb. turkey!  You all know what the smell of a roasting turkey is like… it drove the whole school mad!  Mad! I tell you!!!!!

Now we will have a generational argument about what “mad” means.  I mean insane not angry!  But, I do apologize for my crankiness and I was told I was not “bitchy”, which of course generated a whole new debate about what denoted “bitch”. Sigh! – another point – I actually had a student today tell me I said “Sigh!” out loud.  I did not believe him, but I had!  Oh, my goodness, am I getting that text fixated??????  Yes!!!! Now, back to the “bitch” issue.  I self-disclosed as bitchy but was told – compared to Facebook and the students’ personal experience – I was not bitchy but “cranky!

Now, I will wax poetic about the joys of a turkey dinner.

  1. Turkey
  2. Whipped (not just mashed but with butter and cream) potatoes
  3. Carrots
  4. Stuffing – lots of it!
  5. Creamed corn (?)
  6. Cranberry sauce (jellied like the Simpson’s)
  7. Fireball Yams (OMG!!!!! Recipe to follow!)
  8. and…gravy!!!!

Everyone did a job and the whole class and the other teacher, Caroline, enjoyed the results.  We learned sooo much. The problem was the triptophan and full-to-the-brim feeling. I felt sorry for the teachers of the next class.

Personally, I feel fat. I came home and made supper but I was still full from the class.  I did not eat lunch (chicken stir fry) but I did find a cheese scone. I do not like being uncomfortable.  I am going to go for a walk!  Now!

It’s about the cranberry sauce!

Diane’s Fireball Yams

2-3 pound of yams or sweet potatoes – peeled and cut into 1/2 inch pieces
dots of butter
1/4 cup brown sugar
1 ounce Fireball
1/2 ounce Cointreau or Triple sSec (don’t use Blue Curacao or you will get turquoise yams! Another story)

Slice the yams(sweet potatoes) into a single layer into a relatively shallow dish or casserole. Sprinkle with brown sugar and dot with butter over the whole thing.  Then, pour the Fireball and Triple Sec over over the whole thing and add to the oven at 325/350 F for at least 1 hour!!!!  The alcohol evaporates but the flavour remains – big time!  Enjoy!
